Modern New England dining in a historic waterfront setting, inspired by Maine’s landscape and natural bounty.
Colin Wyatt • Chef/Founder
Colin Wyatt returned to Maine after twelve years working in New York’s DANIEL and Eleven Madison Park, where he led the team awarded the accolade of “The World’s Best Restaurant” in 2017. A veteran Portland chef, the natural beauty, vibrant culture, and passion of Maine’s growers and creatives ultimately called him back to open the doors of Twelve. “Maine has always been a place I wanted to return to. As beautiful as it is, I think it’s the people that attract everyone to the state. This is why I came back and why I wanted to start this restaurant. Twelve is a way for us to be a part of this community and hopefully, add our own voice to it.”
Hannah Ryder • Executive Chef
Hannah's passion for cooking began early, nurtured by family dinners that emphasized the importance of good food and togetherness. After moving to New York to attend culinary school, she honed her skills at Cafe Boulud and later, Aquavit. Building on her experience, Hannah returned to Maine with stints at Evo and Chebeague Island Inn before stepping into her current role at Twelve. Leading the kitchen at Twelve, she combines culinary tradition with a commitment to creating exceptional dining experiences, all while fostering a collaborative and innovative environment for her team.
Georgia Macon • Pastry Chef
A lifelong baker and sweet tooth, Georgia left for Le Cordon Bleu in Paris, France the day she graduated high school, where she was awarded a degree in Pastry Arts.
She recently relocated to Portland, Maine after culinary stints in New Zealand, Martha’s Vineyard, and notably the Tartine Bakery in San Francisco.
“I couldn’t imagine a better opportunity than Twelve to get to know the community, the food, and the farmers of our new home. With Twelve, I’m grateful and excited to help create special memories for our diners, and to introduce myself to the community the best way I know how to – with my food.”
David Albright • General Manager
With over 15 years of hospitality experience, David Albright joins Twelve and Prentice Hospitality Group as the General Manager. He spent many of those years in New York City, serving as Service Manager and Sommelier at Marc Forgione (previously Michelin-Starred).
More recently, David was at the helm of the locally acclaimed Novella Osteria in his hometown of Columbus, Ohio. It was during this time that he was introduced to southern Maine by his now-wife, and the couple decided to get married in the area.
David is thrilled to return to Portland indefinitely. He looks forward to immersing himself in the city's extensive local food and beverage scene and bringing his considerable talents to Twelve.
Jenn Forge • Lead Sommelier at Twelve
Hailing from Portland, Maine, Jenn is a seasoned professional with nearly 20 years in the city's restaurant scene. She discovered her love for the hospitality industry while studying vocal and piano performance at the University of Southern Maine. Jenn developed a passion for craft and classic cocktails, and quickly honed her beverage skills while working at Lolita Vinoteca + Asador on Munjoy Hill, where her passion for wine truly blossomed. Jenn is a Certified Sommelier with the Court of Master Sommeliers and holds the WSET Level 3 Advanced Award in Wines as well as a degree in Hospitality Management. Jenn is ambitiously pursuing the Advanced certification through the Court of Master Sommeliers.
As Twelve's sommelier, Jenn curates transportive wine experiences and excels in personalizing service for guests. With an ever-evolving list, she is always pushing the boundaries and seeking new ways to bring unique experiences to both locals and visitors. When not at Twelve, she cherishes time with her daughters and husband, whose support makes her studies and career possible.
Hayley Hastings • Assistant General Manager
With a lifelong passion for hospitality and creating memorable experiences, Hayley Hastings brings heart, warmth, and an authentic sense of place to everything she touches. Her journey began in Portland, Maine, working alongside her mother in the floral industry before spending several enriching years at Five Fifty-Five, one of the beloved restaurants that helped put Portland on the culinary map.
Drawn to explore and learn, Hayley spent time in Oregon, Massachusetts, and New York, gaining a well-rounded perspective on hospitality across different regions. Now happily back in her home state, Hayley is excited to celebrate Maine's incredible food community as a passionate advocate for sustainable agriculture and independent farms.
To Hayley, food is more than sustenance — it's a way to connect people, share stories, and build lasting community bonds. She brings deep intention and heartfelt care to every dining experience she creates.

Past Meets Present
Past meets present within the storied walls of this 150-year-old brick building, formerly known as “Building 12: Pattern Storehouse”. In 2022, the structure was carefully mapped out and rebuilt brick-by-brick in its current location on the Portland waterfront, becoming the home of Twelve.
